It is a fascinating contrast to be strolling through the modern streets of İzmir and suddenly find yourself immersed in the deep, authentic culinary culture of Adana. The main reason I included Ateş Ocakbaşı in our itinerary is how they elevate the traditional 'ocakbaşı' (fireside grill) culture. They’ve moved away from the familiar, noisy tavern atmosphere, transforming it into a much more refined experience with comfortably spaced tables and classical Turkish art music playing softly in the background. While waiting for that authentic Adana kebab—hand-minced with a traditional zırh (armor blade)—you must absolutely try the 'Ateş Special' meze, served warm with roasted eggplant and melted cheese. For one of those signature İzmir evenings filled with lingering conversations by the fire, this is the perfect address.
